Karambi is located in the sector with the same name in the Nyamasheke district, Western province. Lying alongside the Kivu lake, the growing conditions are excellent. Good altitude, great soil, favourable rainfall - basically all components to produce the best coffees. The washed process is a classic method of processing. The coffee cherries passes through a depulper and mucilage removal machine. With just a bit of the mucilage intact, the coffee beans undergo a 12 to 24 hours fermentation that takes place in concentrate tanks. Later, the coffee goes through the washing and grading channel - where the densest beans remain at the start of the channel, and the least density beans float to the end of the line. This process separates the batch in 5 different parchment grades, and only the heaviest coffee beans are chosen for the microlot preparation.
