This coffee comes from a farm owned by Ibu Eti Sumiati. She owns a farm located at 1500 masl in Kamojang, West Java. We’ve been working with wanoja cooperative for about the last 3 years. This is the second year we did experiment with anaerob fermentations, this year we also experiment a new process with yeast involved. Stay tune!
The pickers at Wanoja, only pick the fully ripe cherry. After the cherry was picked, then the coffee went through a controlled fermentation. They put the cherry into a tank, creating an anaerob condition. This specific lot, they left the cherry for another day in the tank, pushing the fermentation to its limit! This condition, allowing only specific bacteria and yeast during fermentation, resulting clean and intense tropical fruit flavor. The coffee is then sun-dried for around 30 days until reach 11% moisture.
