Pineapple, Dark Berries, Cacao Nibs
This coffee comes from a farm owned by Ibu Nenek. She owns a farm located at 1500 masl in Kamojang, West Java. We’ve been working with wanoja cooperative for about the last 3 years. This is the first year we did experiment, to push the boundaries of natural process coffee.
The pickers at Wanoja, only pick the fully ripe cherry. After the cherry was picked, then the coffee went through a controlled fermentation. They put the cherry into a tank, creating an anaerob condition. This condition, allowing only specific bacteria and yeast during fermentation, resulting clean and intense tropical fruit flavor. The coffee is then sun-dried for around 30 days until reach 11% moisture.
The result is an intense aroma of pineapple, dark berries and sweet cacao nibs.
