Santa Felisa is family-owned coffee estate in El Paraxaj, Acatenango. This estate was established in 1904, and currently being run by the fourth generation: Anabela and Antonio Meneses. Ten years ago, Anabela decided to put a concept of Precise Agricuture with ecological emphasis, working with the community and understanding the natural systems.
This practice starts with choosing quality seeds of each varieties. The microclimate, agricultural practices and harvesting only the perfectly ripen cherries are vital steps to keep the natural quality of the bean. They have tested over 30 different varieties in a pilot field before planting.
This coffee plantation won the Guatemala Cup of Excellence in 2017. The cherries were anaerobic fermeted for five days. Then, natural dried under the sun for 25 days while keeping the temperature consistent to be under 30 C.
Since we are now roasting on Loring S15, we will only roast Esmeralda and process your order once we have enough orders to roast a batch. But it usually won't be too long! We believe it will worth all the wait!
