This coffee was grown in 1890 on a volcanic mountain in Berlin, Santiago de Maria and Joy and the plants imported from Antigua Guatemala. Mostly the farm using varietals Borboun Elite, Pacas and Pacamara but also taken part in Procafe project growing different varitals. So, they habe native coffee trees, natural mutants, and hybrids originated from all over the world.
The producer was one of the pioneers in El Savador of Micro Coffee Mill. He still experiments with processing and drying method. In this year, he soaking the coffee after pulped and demucilaged with great succes flavorwise.
They picked ripe cherries only.They used new jotagallo eco pulper with mechanical demucilager for pulping and demucilaging process. They soaked over night in clean water before it's washed and then dried it under shade on raised beds between 3-4 weeks.
